The flapjack recipe, the legend

A few of you have asked for this, so here it is.

Van Slyck family top secret best ever flapjack recipe

 125g (4oz) Butter

90g (3oz) Golden syrup (maple flavoured is nice)

50g (2oz ish) Muscavado sugar

250g (8oz) Rolled oats

Any nuts, dried fruit etc that you want to add. I normally put in walnuts and raisins and sometimes pecans and almonds. I never weigh them, I just chuck in a couple of handfuls.

Pre-heat the oven to gas 4/180c. Put the butter, sugar and syrup in a large saucepan and heat gently until it’s all melted and give it a good stir. Then stir in the oats and anything else you’re putting in. That’s it! Now you put it in the oven.

Grease a tin with some butter (I use a 7×7 inch tin which is just the right size. A 7 inch sandwich tin works too) and cook at gas 4/180c for about half an hour. Score into slices when it’s still hot and then refrigerate overnight (if you can wait that long) or a couple of hours should do it. In the morning it should come out of the tin easily enough but a bit of wiggling with a weaning spoon or something else plastic will loosen it up. Then you can cut it into slices or just eat the whole lot.

If you want to do the maple icing then melt a couple of desert spoons of maple flavoured golden syrup in a saucepan until it’s runny and then stir in some icing sugar until it’s a bit goopy. Then drizzle it on top of the flapjacks before you slice them all up.
